It does depend a bit on how you are using Fargate. If it is in EKS there is some documentation here:
https://docs.aws.amazon.com/eks/latest/userguide/fargate-logging.html
This details the logging to CloudWatch - but the ConfigMap contains configuration for fluentbit, so you can send logs pretty much anywhere you want
