Is there any way to attach additional ssl certificates to a load balancer from pulumi? Eg to serve from multiple domains

I haven't tried this, but looking at the docs here it should be a case of adding multiple listener certificates with the same load balancer ARN

that looks like just the thing! I'll give that a try
